This is the chicken I am making for my son'e dinner tommorrow I will let you know how it tastes... hope it is good...

Julie's Oven Baked "Fried" Chicken:

2 cups buttermilk
1/4 cup olive oil
3 tablespoons curry powder
2 tablespoons Dijon mustard
2 garlic cloves, minced
3 teaspoons salt, divided
1 teaspoon ground black pepper

12 chicken pieces (breasts, thighs, and drumsticks) with skin and bones

1 cup Panko breadcrumbs
1/3 cup freshly grated Parmesan cheese
1/4 cup flour
2 teaspoons dried thyme
1/2 teaspoon paprika
1/2 teaspoon cayenne

In a large casserole dish, whisk together the buttermilk, oil, curry, mustard, garlic, 2 teaspoons salt, and pepper to blend well. Add the chicken and turn to coat. Cover and chill for at least 4 hours or up to 1 day, turning occasionally.

Place racks on 2 large rimmed baking sheets and spray the racks with nonstick spray. In a large baking dish, whisk the Panko, cheese, flour, thyme, paprika, cayenne, and 1 teaspoon salt. Remove the chicken from the marinade, allowing excess to drip off. Add the chicken to the breadcrumb mixture and turn to coat completely. Arrange the chicken, skin side up, on the racks on the baking sheets. Let stand 30 minutes.

Preheat the oven to 425F degrees and place oven racks in the upper and lower thirds of the oven. Bake the chicken until crisp, golden, and cooked through, about 50 minutes, switching positions of the trays halfway through. Serve warm or at room temperature.

Hope everyone had a great day. My first day back to work went pretty good. No big surprises. I am makeing dinner for my 26 year old Friday. He is my baby and he just got married in Aug. Will be looking forward to gran babies when the Lord see's fit to bless us. Can't imagine what that will be like. Watching me some little rascal's on TCM this week..I grew up watching them and I love them. So cute and funny. Boy have we changed as a society. Wish we could go back to that innocense. But I am afraid it just can't be. Onward we go toward the end. Talk later

Well it is back to work tommorrow for little oh me. I have had 2 long weeks off and even tho it was busy I enjoyed it. I like me job as a lunch lady but after 12 years I like the time off better. Had fun today playing with my new cuttlebug embossing machine and I made my son Danny a birthday card. My hubby was impressed. I was too it saved me 4$...it was a big card. Ok gotta go watch biggest loser...bye

I'm back....

Just when you thought you would never hear from me again..well I am back...don't ask me why...just am. I have started to make cards and well can I just say I have lost my mind. I can't stop...got my cuttlebug machine and now I have to really get going if I am goin to make and money at this hobby. Just kidding I am just doing it for fun. I love it. I gave a few people some all occasion cards for christmas and I enjoyed doing that. I love to do all kinds of crafts. I love to dry flowers and make arrangments. Well just wanted to stop by and write a little note and maybe just maybe I will see you guys later. Chow
